Mana’eesh:
The man’oushe (pronounced man-OO-shay; plural: mana’eeesh) is the popular Arab street food flatbread that inspired the birth of Reem’s California bakery. You’ll find stands serving up fresh mana’eesh out of giant hearths on street corners and mountain bakeries throughout the levantine region. Mana’eesh are incredibly versatile and can be enjoyed for breakfast, lunch, dinner or midnight snack, solo or as a part of a lavish spread.
ZA’Atar Man’oushe
Our signature man’oushe is topped with an herb blend called za’atar consisting of wild thyme, sumac, sesame seeds and salt blended in to a paste with olive oil and slathered on top of our naturally leavened dough.
The za’atar man’oushe is delicious to eat as is, but also really fun to top with fresh veggies cheeses and more. Here are a few of our favorite toppings:
“Veg Mix” - sliced cherry tomatoes, cucumbers, and freshly-picked mint leaves
Labneh - a thick, tangy yogurt
Fried egg- we like our sunny side up and runny
Za’atar and Cheese Man’oushe
The za’atar and cheese man’oushe is topped with za’atar and akkawi, a brined cheese.

Fatayer
Fatayer handmade savory turnovers are another Arab bakery staple. Like mana’eesh, these can be enjoyed solo as a quick breakfast or snack, or can be part of a larger mezze spread of small shared plates such as dips and salads.
